The name MedChef doesn’t seem to be as fitting a name for a company that churns out wonderfully-crafted baked goodies. I can’t help myself from associating them with medicinal food or something just ’cause their name is a wee bit out of the box–for me, that is.

But then I did my research and found out that the two people behind MedChef came up with this name because they also came from two different backgrounds. One is a true-blue culinary person, Chef Hasset Go. The other is medical technologist Jayson Paul Carlos. You would think that it’s an odd team, but it works.

When I saw this stack of Red Velvet cakes sitting on a little table–yes, table–filled with an array of S’more and Moist Caramel chocolate cakes, brownies and other baked goodies over at The Galleon (again), I was instantly attracted to it.

Since I’m on an eternal diet, I wasn’t sure if I should buy a cake or just walk away and grab something healthier. The former won, although I knew it would ruin my diet.

This is the Red Velvet Cake and all its goodness for only Php60! Even though it was just a simple slice, I thought it looked really good. I think this is their best-selling cake because there were fewer Red Velvet cakes left on the table.

I had planned to eat it after my lunch but I ended up eating it before lunch just because I couldn’t stand closing the cover after I opened it to take pictures of it.

I liked this cake a lot. I found it light, tasty and moist. I applaud them for not going overboard with the frosting. I think it’s the ideal frosting and cake ratio. True to how they describe themselves in their Facebook page, MedChef is indeed the sweetest treat one can have for every occasion. It’s also a great reward for keeping your head cool amid the headache-inducing morning traffic jam.

I think they participate in bazaars such as Mercato and Distrito. You should definitely try their cakes (especially their Red Velvet Cake!!) when you spot them in a bazaar you visit. You won’t be disappointed.

I was browsing my Flickr account earlier today looking for some pictures I uploaded from my old buddy Kodak’s memory card. I was able to look at about 100+ photos I took from my backpacking trip in Nueva Vizcaya last 2008. And hey, I was surprised to see these 3 photos that made my travel in Vizcaya memorable.

From the first time I stepped foot in the province, many locals have told me to try pancit Cabagan which popular among local and foreign tourists. This stir-fried noodle dish is originally from Isabela comes with dark sauce, eggs, veggies and meat.

I don’t know the secret ingredient to this, but it was really yummy! Unlike other common pancit recipes, pancit Cabagan is is not dry and the ingredients blend together really well with the well-cooked noodles. Up to now, whenever I think of pancit Cabagan, I always think that the secret to its delicious taste lies in that sauce.

After having my first pancit Cabagan in Nueva Vizcaya, I bought box of the famous G&B Buko Pie. This is the best buko pie I have tasted so far!

Located along Maharlika Highway Brgy. Tuao Bagabag, Nueva Vizcaya, this yummy Proudly Vizcayano buko pie has a distinctive taste that once you take a bite, it melts in your mouth immediately. Their secret ingredient? Nope. Can’t tell, I don’t know either. But based on my expert taste buds, the secret to this buko pie is…

It’s going to be summer soon. Actually it’s already summer, but it’s still raining… so I’m saying it’s going to summer soon. Hehe. But anyway, one of the best ways to beat the summer heat is by drinking the Pinoy Ice Scramble!

One time, when I was outside, I heard someone walking along the sidewalk asking his friend, “Bakit ang sarap ng ice scramble?”

I don’t know why he asked that because he was not having ice scramble during that time. Well, maybe he had it a few minutes ago before I saw him and his friend. Nyok!

I would have wanted to answer his question but I did not know him and he might find it weird if I suddenly talked to him. So I’m answering that question here. Hehe.

Well if you love milk, I believe you will love Ice Scramble too! Because it’s basically evaporated milk with some banana flavoring mixed with sugar and shaved ice.

Plus, you can put a lot of toppings on it. Anything you want like marshmallows, candy sprinkles and others.

But if you want the classic Pinoy Ice Scramble that first became popular in the 80?s. Then just put powdered milk and chocolate syrup on top. Yummy!

And that’s why Ice Scramble is delicious! And just in case you want to make your own version at home, you can check out this article: How To Make Ice Scramble.

You’ll discover there why Ice Scramble is colored pink! Go ahead and read it. Nyok!

I’ve been cafe-hopping around in Cebu and most of the Cafe’s, I realized are too, well, uniformed. For example if you go to Starbucks, you can sense it’s the usual Starbucks and then when you go to another you associate with the “usual” word. Few weeks ago I decided to go to something new and out of the usual.

I dropped by Cofifi Cafe and fell in love with the place ever since. This time I was able to try their delicious Brownie ala Mode worth only 65php! Totally worth it if you ask me. I like how their Brownie doesn’t crumble when touched (meaning it’s not too dry). It’s got a nice chewy texture just the way I like it.

The place is nice and the food and drinks are affordable! I personally love ucc coffee but the price does not love me Price is definitely one of the reasons why I keep coming back

If you’d drop by here in Cebu sometime to catch up with some old friends then do drop by in Cofifi Cafe which is located in Treehouse Bldg, Aboitiz St (Beside STC’s back gate) Cebu, Philippines, 6000. You can call them with this number: 2680953.

They’re usually open around 7:30am to 12am and on Fridays and Saturdays they close at 1am

Just a suggestion to Ms. Fifi, can we have other flavors in the ice cream too? I love strawberry with brownie. *just a suggestion*

I wonder if they might try to do Froyo’s like what Coffeecat Cebu branch is doing But froyo or not I love this place anyway

These pancakes are obviously American inspired, (well, most of pancakes in the Philippines are liked these) the most common we can see in the market, where number of food processing companies offer quick or ready mix, one-step cooking and the most common breakfast aside from the local Pan de Sal.

Made from egg, flour and milk, prepared flat on a frying pan, and just wait for it to be a little bit golden in color and viola! you have yourself a cake— pancake. Maybe this is a fastest cake to prepared next to the refrigerator cake?!.

*Did you know that pancakes have a celebrated tradition of eating? In Canada, United Kingdom, Ireland and Australia, it is traditionally eaten before Ash Wednesday (Shroved Tuesday)— or the Pancake Tuesday. And in Newfoundland, they place items that will foretell their future? Weird.

Red Ribbon makes a new addition to its Premium Cake Selection line with the new Chocolate Walnut Fudge cake. This creamy cake is just chocolate-filled from top to bottom that chocolate lovers will surely indulge in.

The cake starts at the bottom with a bed of moist fudgy brownie layer that’s loaded with chopped walnuts. It’s middle is filled with a thick layer of Red Ribbon’s one-of-a-kind chocolate mousse, and finally it’s topped with dark chocolate ganache sprinkles. An notable added premium to this signature cake dish is the incorporation of Hershey’s Dark Chocolate that does envelope the side of the cake. The long chocolate curls that fill the cake really makes it more irresistible.

I personally love this cake and I was surprised how a slice can be so heavy on the stomach. I can actually blame it on the walnuts, but I just love chocolates with premium nuts like those. I’m a chocolate lover myself and I really recommend you readers to get to have this cake until it lasts in the market. Red Ribbon actually told us that this cake is already becoming a bestseller for the season and that one should by a cake during the morning. Most of the Chocolate Walnut Fudge cakes are sold out already by afternoon. (Yes, it’s that good! )

The new Chocolate Walnut Fudge with Hershey’s Dark Chocolate is available in all Red Ribbon stores and select booths for 680PHP. Offered only this holiday season, and just like the Red Ribbon Coffee Walnut Bavarian, it’s the perfect ending to any celebration.

One of the local delicacies in Batangas is the Sweet Peanut Candy. It’s simply composed of caramelized sugar and nuts molded into the sizes of saucers. I was privileged enough to join the Carnation Family Foodtrip and see how this Filipino candy was made.

The cooking process started with the peanuts that were simmered along with brown sugar in a big cooking pot called the talyasi. The talyasi was huge that the worker needed a paddle to mix the peanuts and the brown sugar to achieve the right consistency. Here’s a closer look of how everything in the pot looked like:

The perfect consistency reminded me of the viscosity of what a can of pork and beans have, and after the cooking and constant mixing of ingredients were done, the lady with a wooden scooper began to dump the mixture into round molds on the table.

The wooden table was wiped with a little oil and cold water so that the sweet peanut candies won’t stick to it when the old lady was putting each scoop of hot mixture into the molds. The open ventilation of the sweet peanut factory had its use to quickly cool the molded mixtures.

Finished products were quickly packed just as they hardened. As for the rejects, they were packed in another way. The sweet peanut candy didn’t really need to be round to be sold at a good price, but the shape really makes a difference since the delicacy was known for its round and saucer-like shape.

You can also watch an HD video of how the candies were made here.

This afternoon, I got the chance to visit the Happy Cream Puffs Cafe at corner Rada and dela Rosa Streets in Legaspi Village, Makati City. I was on my way to Greenbelt 5 when I decided to stop by their cafe since it’s only a few minute walk from my destination. I bought myself a box of the original Happy Cream Puffs.

I also discovered this afternoon that they have different variants of their famous cream puffs. More information can be found here.

Times have really changed.

Imagine back then, cereals were just part of breakfast together with a good serving of cold milk and a teaspoon of sugar. Back then, the only choices that we have were corn flakes, chocolate pops, rice krispies and fruit loops. Today we have whole grain cereals, honey or sugar coated flakes and a lot more!

I was amused and excited as I chance upon Cerealicious in Greenhills and actually in most commercial areas near high schools and universities. With names that sound like a movie title, they have at least 27 combinations that combines our well-loved cereals with fruits, nuts, chocolates and their homemade milkshake.

We tried the Jumango after going with the recommendation of the server. This is a combination of Cornflakes, Mango and Honey Crumble. I also ask for a scoop of vanilla ice cream to make it extra yummy.

The smallest bowl is only for P50 which I think is worth it. I watched at the server carefully piled my bowl high with cereal, mango bits and a big scoop of ice cream. Lastly, she added a swirl of strawberry syrup before handing the bowl over to me.

I love the crunch that I get in every scoop. The milk shake was very smooth and the ice cream made it extra velvety. It’s also a good thing that they made sure to add in sweet mangoes to make our experience pleasant. Definitely sour bite here.

Peeking over at the tables around us, I noticed that the kids were happily digging into their chocolate coated Oreo & Juliet cereal bowls which has cornflakes, Oreo and chocolate wafer! You also have the option to request for choco milkshake by just adding P5 to your total bill.

Cerealicious is one fun snack that everyone can enjoy at any given day. I look forward to going back and trying out the other 26 flavors available. Perhaps soon, I can also create my own combination as well!
